Super Easy Banana Bread Recipe!


Super Easy Banana Bread

I woke up this morning and
discovered two bananas on the counter
that were overly ripe!

Gave it a little thought and
decided to throw together this
Super Easy Banana Bread!

No mixer required!
I had all the ingredients,
no need for a trip to the store!

Ingredients:

2 (or 3) very ripe bananas, peeled
1/3 cup of softened butter
1 cup of sugar
1 farm fresh egg
1 tsp vanilla extract
1 tsp baking soda
Pinch of salt
1 1/2 cups of all-purpose flour

Directions:

- Preheat oven to 350 degrees.
- Butter, or spray with non-stick, a 4x8-inch loaf pan.
(I used a silicone pan, no need for non-stick prep!)

- In a medium bowl mash the bananas with a fork, until smooth.
- Stir the butter into the mashed bananas.
- Stir in the baking soda and salt.
- Beat the egg in a small bowl, then add to the banana mixture.
- Add sugar and vanilla extract, mix well.
- Stir in the flour.

- Pour your batter into the loaf pan.
- Bake for 50 minutes at 350 degrees.
- Check to see if it is done by inserting a toothpick into the center,
if the toothpick comes out clean it is ready to remove from the oven.
(If you have no toothpicks on hand you can use a small knife.)
- If not done, continue to cook for 5 minutes.
- Cool bread on a wire rack.
- Remove the banana bread from the pan
once it is cool enough to handle.
- Slice and serve warm, with butter.

~~You can add a cup of nuts, or chocolate chips,~~
~~or even raisins/berries to the recipe.~~

**Note:  Using the silicone pan, I was able to loosen the bread
from the pan as soon as it came out of the oven,
slice and served it steaming hot!  Yum!
